For large gathering I like to keep the appetizers simple, light and yet tasty. Most importantly, bite sized appetizers work much better. I decided to work with cucumbers and cauliflowers to creat this dish and everyone loved them.

What do we need?

  • 4-5 cucumbers sliced round (you may or may not use the peel. I didn’t)
  • 1/2 cauliflower- boiled and puréed
  • Salt- to taste
  • Pepper- taste
  • 1 tsp- Smoked paprika
  • 1/2 cup- Heavy whipping cream
  • Cherry tomatoes- cut in half

What do we do?

  • In a saucepan mix in the boiled and puréed cauliflower, salt, pepper, smoked paprika and the whipping cream and simmer until a creamy consultancy.
  • Keep aside and let cauliflower purée cool.
  • On a serving plate- place the cut cucumbers.
  • Fill the cauliflower purée in a piping bag and pipe the purée on to the cucumbers
  • Top the cucumbers with cherry tomatoes
