We had a dessert competition at work and I had to bring something that would suffice about 200 guests. I was thinking about something bite sized and bright and then came up with the idea of stuffing strawberries with cheesecake.. most people love strawberries and cheesecake is unbeatable. Strawberries had to be cored.. that is a bit time consuming so I chose a no bake receipt for the cheese cake and also an eggless version so vegans could also have the dessert.

What do you need?

  • 1 – 8 ounce package creme cheese
  • 1- pint strawberries – (large strawberries look perfect)
  • 2.5 ounces – White chocolate chips
  • 5- 6 tsp- dark chocolate powder
  • 1/2 tsp- vanilla extract
  • 1/2 cup confectioners’ sugar

What do we do?

  • Wash and core the strawberries. Slightly cut the tapered end of the strawberries so they can stand and take the weight of the fillings.
  • Soften the cheesecake by bringing it to room Temperature then mix in the vanilla extract and confectioners’ sugar until smooth.
  • To make white chocolate cheese cake filling:
    • Melt white chocolate in a double boiler until all the chips have melted.
      Mix is half of the creme cheese mixture with the white chocolate.
      Fill up a piping bag with white chocolate- creme cheese mix and pipe some core strawberries.

    To make dark chocolate cheese cake filling:

    • Mix the dark chocolate powder in the remaining half of the creme cheese mixture.
    • Fill this mix in a piping bag and then fill the remaining strawberries.

    How do we serve

    • Garnish with little slices of strawberries and serve.
