A mouthful of sweet coconut truffles could be just heveanly if made to perfection. Color them up- kids get attracted, spice them up with Rose preserves and see the magic
What do we need?
- 1 cup grated coconut
- 1/4 cup sugar
- 1/4 cup brown sugar
- 2 cups whole milk, you might as well use 2% milk.
- Few drops of food coloring of your choice. I used red and green
- Rose preserves (Gulkand)
Let’s get cooking
- In a pan heat the milk and let it come to a boil.
- Keep stiring till the milk starts to reduce. If you stop stirring at this time then the milk will stick to the pan.
- Now add the brown sugar and sugar.
- Next add in the coconuts and let it cook until the milk has completely reduced.
- In a separate bowl add two drops of red food color in a tea spoon of milk and in a separate bowl add two drops of green food color in a tea spoon of milk.
- Now, divide the coconut mixture in half and mix one half with the red food color mix and the other half with the green color mix.
- Let the both the mixtures cool for a while before you start making little balls pressing between your palms.
- STUFF the Coconut truffles– While making the truffles stuff the truffles with rose preserves.
PS: you will find a lot of recipes online using condensed milk and evaporated milk.. But believe me.. This recipe is time consuming but the taste is just amazing!
